Water woes behind, LC welcomes Dais

The City of Paris, Paris Economic Development Corporation, Lamar County and Lamar County Water Supply officials all have had a part in reaching a Memorandum of Understanding with Daisy Farms, a subsidiary of Daisy Brand, the number one producer of sour cream in the nation and the winner of the 2008 Business Ethics Award.
Daisy Farms is a 10,000-cow plus dairy planned five miles south of Paris along Texas 19/24. The dairy is being developed to provide quality milk for Daisy Brand’s premier sour cream and cottage cheese products, which are produced in Garland.
We understand final water negotiations on water rates have been completed, and attorneys are in the process of wrapping up legal documents. Paris Mayor Jesse Freelen has told The Paris News a water rate completion announcement should be forthcoming, probably in December, After months of negotiations with Daisy officials along with PEDC, Lamar County and now Lamar County Water Supply, we are pleased this fine company and its president, David Sokolsky, have remained patient with the process.
Time and again, both Freelen and City Manager Kevin Carruth have said water negotiations have complicated issues. Freelen expressed optimism a week ago when he shared that final negotiations with Lamar County Water Supply had been completed and an agreement reached to allow the City of Paris to deliver water to Daisy Dairy through the Lamar County district without charging a maintenance and operations fee. In return, the City of Paris is to maintain the pipeline. The mayor said Lamar County Water District would control the pipeline if it were no longer used by the dairy operation. The pipeline will serve only the dairy; no taps can be made along the way.
With tedious negotiations behind, the memorandum of understanding was made possible, providing Daisy Dairy the assurance the water the dairy needs will be available at a rate that allows a profitable operation.
We join the leaders of our community who met with Daisy Dairy officials Friday at Paris Golf & Country Club in welcome this new industry to Lamar County. Based on the long history of this fourth-generation, privately-owned company, we know Daisy Dairy will make Lamar County proud.
